
These cookies were a hit at a Memorial day BBQ! They were so easy to make and have ready for the evening. They are my husbands favorite cookie, and go well with a glass of milk.
Snicker Doodle Cookies

Ingredients:
- 3 Cups of all purpose Flour (spooned and leveled)
- 2 teaspoons of Cream of tartar
- 1 teaspoon of baking soda
- 1 and 1/2 teaspoons of ground cinnamon
- 1/2 teaspoon of Salt
- 1 cup of unsalted butter (room temperature)
- 1 and 1/3 Cup of granulated sugar
- 1 large egg + 1 egg yolk at room temperature
- 2 Teaspoons of pure vanilla extract
- Topping: 1/3 cup of sugar and 1 teaspoon of ground cinnamon)
Directions:
- Pre heat oven to 375F (190C)
- Make the topping: whisk sugar and cinnamon
- Whisk flour, creams of tartar, baking soda, ground cinnamon and salt.
- in a large bowl using a hand or stand mixer mix butter and sugar till smooth and creamy, add egg and egg yolk and vanilla extract. mix well.
- Slowly add dry ingredients to the wet ingredients until a dough forms. the dough will be thick
- roll cookie dough into balls, I like to use a cookie scoop to get the same amount each time.

- Place cookie dough balls three inches apart on a cookie sheet
- Bake 10 minutes or until golden brown on the sides. cookies will be very puffy and soft.
- Sprinkle a little extra cinnamon sugar topping on the warm cookies.
- Allow the cookies to cool on the cookie sheet for ten minutes then transfer to a cooling rack.
- Cookies will stay soft and fresh for 7 days in a air tight container.

Freezing Instructions:
If you're not ready to bake yet, you can freeze the cookie dough just after rolling the dough balls in the cinnamon sugar mix. This will keep in the freezer for 2 months! Make sure to bring the dough up to room temperature before baking, about 30 minutes, or while your oven is preheating. You can also bake then freeze the cookies, just thaw over night in the fridge for the next day.
